The current theme for Cee’s Midweek Madness Challenge is Words that Have the Letter “O” Anywhere in the Middle.



It’s that time of year where I live… just feeling some Autumn-ish temps in the mornings the past couple of days. Aaaah! I love soups and this one is a favorite for sure. The nutritional yeast really adds a buttery, chickeny flavor and it’s such a healthy bowl of warmth. I always double the recipe and freeze portions for reheating. 🍁🍂🍁
Veggie “Chicken” Soup
Ingredients
4 cups vegetable broth or chicken broth
1 cup water
1 tbsp coconut oil (or vegan butter)
1 medium onion, chopped
3 cloves of garlic, chopped
2 large carrots, sliced into rounds
3 celery stalks, chopped
1 red pepper, chopped
2 red potatoes, chopped (or 1 red and 1 sweet potato)
1 bay leaf
1/2 cup flat-leaf parsley, chopped
1/4 cup nutritional yeast
1/2 tsp turmeric
1/4 tsp paprika
1/8 tsp cayenne
1/4 tsp black pepper
1/4 tsp sea salt
Directions:
Wash and chop all your veggies.
Add oil, garlic, onion, carrots and celery to a large soup pot and sauté for 3 – 5 minutes to soften the veggies.
Then, add potato, pepper, parsley, nutritional yeast, spices, broth and water.
Bring to a boil, stir a bit and then reduce heat to med-low, put lid on and simmer for about 25 minutes to soften the potatoes and blend flavors.
Sea salt & pepper to taste.
I really can almost smell and taste it😁
